Vegetables such as broccoli, cauliflower, kale and cabbage are particularly rich in a plant chemical called sulforaphane (SFN) which boosts production of certain “defense” enzymes that increase the activity of antioxidants. Young broccoli sprouts have a particularly high level of SFN compared to other foods. Ozone is a common air pollutant and we know that if you inhale increased levels of ozone that it will cause some inflammation in the cells of your lungs.

The purpose of this research study is to learn if we can reduce the amount of inflammation caused by ozone exposure in healthy volunteers treated with broccoli sprout homogenates (“shake”) and a placebo (alfalfa sprouts) homogenate. You will undergo the ozone exposure on 2 separate occasions, and before 1 exposure you will drink the active sprout “shake’ and before 1 exposure you will drink the placebo “shake”. We will measure the airway inflammation by obtaining a series of sputum samples (the material you would cough up from your lungs), as well as superficial biopsies of the inside lining of your nose both before and after you undergo each exposure.

  • You must be between 18 and 40
  • You must be a healthy person, no allergies or asthma and no smokers.
  • Women who are pregnant or nursing a baby cannot participate.

Time Commitment:

10 visits over 5 – 8 weeks, and an additional screening visit (IRB #98-0799)
