UNC School of medicine researchers led by <a href=\"https:\/\/www.med.unc.edu\/medicine\/directory\/scott-p-commins-md-phd\/\"><strong>Scott Commins<\/strong><\/a>, MD, PhD, may be able to answer some of these questions by studying an unusual food allergy to mammalian meat called alpha-gal syndrome.<\/p>\n<p>Thirteen years ago, <a class=\"external-link\" title=\"\" href=\"https:\/\/www.med.unc.edu\/medicine\/directory\/scott-p-commins-md-phd\/\" target=\"_self\" rel=\"noopener noreferrer\">Commins<\/a>\u00a0and colleagues at the University of Virginia were attempting to solve an unusual conundrum. People were reporting late-night symptoms ranging from hives to shortness of breath and gastrointestinal issues. The reactions were eventually linked to an allergy to alpha-gal, a molecular sugar found in red meat. Many of the affected reported eating mammalian meat their whole lives without problems. So, why the sudden change?<\/p>\n<p>It wasn\u2019t until some of Commins\u2019 peers also began having reactions \u2014 one even needing a trip to the hospital due to anaphylactic shock \u2014 that the picture became more clear. Like detectives trying to piece together a case, the researchers sought commonalities among the allergy \u201cvictims.\u201d Their answer was surprising: All spent lots of time outdoors.<\/p>\n<p>Learn more from the <strong><a href=\"http:\/\/Richard Boucher, MD, the James Moeser Eminent Distinguished Professor of Medicine and director of the UNC Marsico Lung Institute, has been studying the ins and outs of mucus and its role in human health and disease for decades.
