Recent studies published by Jenny Ting’s group in Nature Immunology indicate that diets high in saturated fats (but not unsaturated fats) drive an inflammatory response that can lead to the development of Type 2 diabetes. Their data demonstrate that diets high in saturated fats induce inflammasome production of caspase-1, IL-1β and IL-18. This inflammatory response induces resistance by liver, muscle and adipose tissue and generation of Type 2 diabetes.
